Three Ingredients Recipes

Being a stay at home mum doesn’t give me the luxury of spending hours in the kitchen. Sometimes, I need to prepare the quickest meals I can, but I still want them to be nutritious for my boys.



I know many moms face the same issues I do, so I put together four recipes of mine that work wonders on days I really need to throw a meal together quick!


These recipes are foolproof, delicious, can be done is less than an hour and most importantly, they're my boys’ favourite, but feel free to modify them. I've given some recommendations at the end of each recipe.


Fish Pie


Main Ingredients:

  1. 300 gm salmon fillet

  2. 2x potatoes (or 1 potato and 1 carrot)

  3. Cheddar cheese (grated)


Seasoning and spices (optional or add to suit your taste)

  • Pepper

  • Salt

  • Parsley leave



Directions


  1. Peel potatoes and cut them into big chunk

  2. Steam the cut potatoes for about 10-15 mins or until tender

  3. Clean salmon and rub some salt on the surface

  4. Pan fried/steam salmon. Discard the salmon skin after cooking.

  5. Mashed potatoes with a fork/whisk. Season with pepper, salt and parsley

  6. Mashed salmon with a fork.

  7. Lay the mashed salmon in oven proof ramekin.

  8. Layer mashed potato on top of the salmon.

  9. Sprinkle a handful of grated cheddar cheese

  10. Bake in the oven for 10 mins at 170 deg C.


Variation :

Replace fish with meat of your choice. It is recommended to use mince meat for this recipe and marinate the meat ahead of time for a better taste.


Personally, I like to marinate meat with onion powder, soy sauce/ himalayan salt and sesame oil. I love the smell of sesame oil.


Sweet Potato Pancake


Main ingredients

  1. 1 big sweet potato

  2. 1 small onion

  3. Grated cheddar cheese


Seasoning (optional)

  • Salt

  • Pepper


Directions


  1. Peel and shred the sweet potato and set aside.

  2. Chop the onion finely. Use hand chopper if you have one.

  3. Mix sweet potato and onion, add salt and pepper to your taste

  4. Add in a handful of grated cheddar cheese and mix well.

  5. Lay baking sheet on the oven tray.

  6. Pour the mixture on the baking sheet. Press and flatten the mixture to about 5mm.

  7. Add more cheese on top if you are a cheese lover.

  8. Bake at 170 deg C for 15 mins


Variation :

  • If you are not a cheese lover, replace cheese with egg. Cheese/ Egg act as a binder in this recipe.

  • You could also add in chia seed to the mixture.


Steam Potato Egg


Main ingredients

  1. 1 potato

  2. 2 eggs

  3. Frozen sweet corn


Seasoning

  • Salt

  • Parsley


Directions


  1. Peel and cut potato in big chunk

  2. Boil potato for 10 mins or until tender

  3. Beat the eggs and add a dash of salt. Set aside.

  4. Roughly mashed the potato with fork, add frozen sweet corn and mix well

  5. Lay the mixture on a ramekin. Pour in the beaten egg

  6. Steam for 5mins

  7. Sprinkle some parsley flake on top (optional)


Variation :

You can use carrots instead of corn. If you are using carrot, boil the carrot together with potato and mashed it with a fork.


Baked Macaroni


Main Ingredients


  1. 1 cup of macaroni

  2. Handful of broccoli florets (chopped)

  3. Grated cheddar cheese


Directions


  1. Cook macaroni as per the pack instructions

  2. Lay the cook macaroni on a ramekin

  3. Add chopped broccoli.

  4. Add in a generous amount of grated cheddar cheese.

  5. Bake for 10-15 mins at 170 deg C


Variation :

You can add in chicken cube/ mince meat if you want protein added to this dish. Otherwise, it is delicious as it is.
